Workshop: Discover the use of spices in cooking in the « Cevennes » region of France:

How can you transform the simplest dishes: green salad, potatoes, rice?
Discover the secrets and delicacies of ginger and coriander, basil and safran, cumin and oyster sauce, red chilli and 40 other spices!
Learn how to improve the simplest dishes and make them into something sophisticated and special!





Location: in Aulas, in the French department of Gard, in a park where there was once an eighteenth century silk mill and in its thirteenth century kitchen.

Programme :
Thursday evening: Welcoming of participants: Dinner either in the house or on the park grounds depending on the weather.
Friday morning: The workshop begins at 9:30am and goes until 2:00pm.
Each half-day includes 4 steps and is followed by a dinner the participants will savour. This first session will present 20 spices: how to choose them, where to buy them, how to keep them. You will ask your professor how to use the spices in the 3 dishes you make most often.
Afternoon: Participants will go on an outing.
Saturday morning: Visit of the local open-air market, then the workshop begins at 10:00am and continues to 2:30pm. You will have the pleasure of discovering 20 new spices.
Afternoon: Visit the local region (wine tasting of Languedoc wines or seafood specialties), shopping for spices.
Evening: A celebratory meal of « Bouillabaisse » or seafood platter at the Pond of Thau, or your choice of dinner at Aulas.
Sunday morning: Participants' choice:
- Walks on hiking paths to Mont Aigoual or on the « Causses » (limestone hillsides) to collect thyme
- Or a game for recognizing spices
Early afternoon: Participants prepare a lunch with spices. Practical activities covering newly learned material.
The workshop ends late afternoon.

Accommodation: You will be lodged in a bed and breakfast near to the eighteenth century house where the workshop will take place.

Tariff : 580 € meals and lodging in a double room included.
Supplementary fee for additional guest: 220 €
Drinks and « Bouillabaisse » dinner or seafood platter will require additional fees.
